• Check the date format. American packs usually print MM/DD/YYYY and British ones DD/MM/YYYY, which is exactly how a perfectly fresh product gets mistaken for an expired one and the other way round.

• “Best before” and “use by” are different things. Best before is about quality — biscuits past it are stale, not dangerous. Use by is about safety and should be respected.

• Read the allergen line. Imported packs list allergens clearly, usually in bold: nuts, milk, soy, wheat, egg. If anyone in the house has an allergy, this is the line that matters more than any other on the pack.

• Check for gelatin and animal fat if that matters to you. Many imported sweets and marshmallow products contain them and it is not always obvious from the front of the pack.

Storing Food in This Climate

Heat and humidity shorten shelf life more than dates suggest. Chocolate blooms and turns pale above about 24°C — it is still safe, but the texture changes. Crisps and cereal go soft in an open pack within a day here. Nuts go rancid faster than almost anything else and are worth keeping in the fridge once opened.

• Airtight containers for anything opened, especially cereal, nuts and crisps.

• Chocolate in the coolest cupboard, or the fridge in summer, in a sealed box so it does not absorb other smells.

• Buy the size you will finish. A large pack that goes stale is not a saving.

Will chocolate survive delivery in summer?

Chocolate can bloom — go pale and grainy on the surface — in transit during the hottest months. It is a cosmetic change and it is still perfectly good to eat, but if it matters to you, it is worth ordering chocolate in the cooler part of the year.

How much shelf life will it have?
