Why Wood Rather Than Steel or Plastic

Looking After Wood

Wood needs slightly different treatment from plastic or steel, and it lasts for years if it gets it:

  • Wipe it with a damp cloth and dry it immediately. Do not leave it wet.
  • Never soak it and never put it in a dishwasher. Both split wood — this is the single most common way a wooden tray is ruined.
  • Keep it out of direct sunlight, which fades and dries the grain.
  • Rub a little food-safe mineral oil into it occasionally if it starts to look dry or pale.
  • Serve wet or oily food on a plate set on the tray rather than directly on the wood.

Yes — wood handles a hot cup far better than a polished table does, which is part of the point. Very hot pans are a different matter; use a mat.
