Raw cashew kernels — kaju badam — in a full 1kg pack from Vietnam, one of the largest cashew producers in the world. Whole shelled kernels, unroasted and unsalted, which is the version cooks want.

You can roast them yourself in a dry pan in five minutes and get a far better result than a pre-roasted pack that has been sitting in a warehouse — and raw is what you need for cooking, where they are ground into gravies, korma and sweets rather than eaten crisp.

• Rancid nuts smell sharp, like old paint or crayons, and taste bitter. Throw them away; the smell is the test.
• Never store them anywhere damp. Mould on nuts is not something to pick around.

The practical approach with a kilo: keep a small jar in the kitchen for the week and put the rest in the freezer. They do not need thawing — take out what you want and use it.

How to Roast Them

1. Heat a heavy dry pan on a medium-low flame. No oil.
2. Add a single layer of cashews and stir constantly.
3. They are done at pale golden, in about four to six minutes. They go from golden to burnt very fast, so do not walk away.
4. Tip them straight onto a cold plate — a hot pan keeps cooking them.
5. Salt while still warm if you want them salted.
